Dinners in the Dark at CAMAJE are multi-course meals eaten while blindfolded. Without sight, diners’ other senses are heightened. Smells, textures and sounds all become more intense.  Arrive at our door, don a blindfold and let us take you on an unforgettable ride.  • Dark Dinners are special events that are held every Wednesday and Saturday at 8pm—not every night. •  Things to Know: Diners wear comfortable blindfolds throughout the event. The dining room is not dark. Menus are secret until the end of the meal so naturally guests have fun guessing which food and wine is on the plate and in the glass.  Any dietary restrictions can be accommodated. When you purchase your tickets you will be prompted to tell us of any allergies or dislikes.  Tickets must be purchased in advance at camaje.com. Winter Soups & Stews We'll make roasted chicken stock, and then focus on techniques to make a variety of soups and stews.  Our menu will include, Tuscan White Bean, Kale & Sausage Stew, Coq au Vin, French Onion Soup, and Curried Coconut & Red Lentil Soup. Private classes start at $275, and $75 each additional person and you choose the time (usually 3-4 hours) and the cuisine/menu.  Even invite friends to come and enjoy fruits of your labor in our "One Night Stand" program! They are intimate (there is room for only 6 students per class) and are taught in a working restaurant kitchen by a professional chef. Class starts in the Camaje dining room, where you meet your chef/teacher and your classmates to discuss the menu and how to prepare it. Then you don aprons and, under the chef’s watchful eye and with her help, if needed, you prepare your ingredients. Prep finished, it's time to move to the kitchen to cook. (Remember: You are in a working restaurant kitchen—if there’s a rush, stand back! Students tell us they find this exciting and instructive.) Fresh Pasta for Couples  •  $200 When you bite into fresh, homemade pasta, there's that pausewhen you just can't help but stop talking and savor it's deliciousness.  How can two ingredients taste so sublime?  Well, they do.  We'll make Linguine alla Vongole (Clam Sauce), Agnolotti alla Piemontese (Spinach and Braised Beef), Gnocchi di Patate con Salsa di Pomodoro (Potato Gnocchi with Fresh Tomato Sauce), Orecchiette con Rapini e Salsiccia (Broccoli Rabe and Sausage).  Bring your special someone to our dinner party, we'll cook, drink lots of wine, and have a generally wonderful time.   Beer and Wine included in price. We discuss which knives you really need; how to hold a knife for efficiency, speed and safety; what it means to sharpen versus hone; how to use your honing steel; and a magical way to get the garlic smell off your fingers. Technique: Fish & Shellfish  •  $125 Cooking fish is a delicate affair.  We'll start with learning how to fillet a whole fish then create delicious fish dishes that focus on different techniques: sautéing, grilling, roasting and poaching.  We'll make Fish Stock, Seared Sea Scallops, Garlic Shrimp, Fish Mediterranean, Seared Market Fish with Salsa Verde and New England Fish Chowder.
